Ingredients
- Skyr200 g
- Espresso1 shot (30 ml), cooled
- Banana1 medium, about 100 g
Peeled weight. A medium banana is about 100 g without the skin.
- Walnuts15 g
- Maple syrup1 tsp (7 g)
Method
Make the espresso first and leave it to cool for five minutes. Hot coffee stirred into skyr turns it thin and grainy.
Stir the coffee and maple syrup into the skyr until it is an even pale brown. It will loosen a little and that is expected.
Slice the banana over the top and break the walnuts over it with your fingers.
Worth knowing
- Instant coffee works if you dissolve a teaspoon in a tablespoon of boiling water and cool it. Cold brew from the fridge is easier still and needs no waiting.
- Walnuts are 6.9 kcal a gram, the densest thing in the bowl. Fifteen grams is about six halves.
