Ingredients
- Wholemeal flour50 g
- Egg1 large (55 g)
- Semi-skimmed milk100 ml
- Baking powderHalf a teaspoon
- SaltA pinch
- Skyr120 g
- Frozen mixed berries100 g
- Honey1 tsp, about 7 g
- Olive oil spray3 sprays, about 0.75 g
Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.
Method
Whisk the flour, baking powder, salt, egg and milk to a batter the thickness of double cream.
Warm the berries in a small pan until they collapse and their juice runs, about four minutes.
Cook the pancakes in a sprayed pan over medium heat for a minute and a half a side.
Stack with the skyr, spoon the berries and their juice over, and drizzle the honey.
Worth knowing
- Frozen berries cooked down make their own sauce. Fresh ones do not, and the honey then has more work to do.
- Skyr at 120 g is the protein. It is 11 g per 100 g at 0.2 g of fat, against half the protein for the same weight of natural yogurt.
