  • Bagel thin1 thin, about 45 g
  • Bacon medallions60 g, two or three medallions

    Weighed raw. Back bacon with the fat on is about double.

  • Egg1 large (55 g)
  • Tomato60 g
  • Tomato ketchup1 tbsp, about 15 g
  • Olive oil spray2 sprays, about 0.5 g

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Fry the medallions in a sprayed pan over medium heat for two minutes a side until the edges crisp.

  2. Push them to one side and crack in the egg. Cook until the white is set and the yolk still moves.

  3. Toast the bagel thin, spread it with the ketchup, and stack the bacon, egg and sliced tomato.

Worth knowing

  • Medallions are back bacon with the fat cut off, 2.5 g of fat per 100 g against ten times that for streaky. They crisp at the edges but never go crunchy, which is the trade.
  • A second egg adds about 7 g of protein and 9 g of fat. It fits, if it is a bigger morning.
