Ingredients
- Gluten-free oats40 g
Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.
- Orange1 medium (130 g), half juiced and half segmented
Peeled weight.
- Skyr150 g
- Water50 ml
- Pumpkin seeds12 g
- Ground cinnamonA pinch
Method
Squeeze the juice of half the orange over the oats with the water and stir in the skyr and cinnamon.
Cover and leave in the fridge for an hour, or overnight.
Toast the pumpkin seeds in a dry pan for two minutes until they start to pop, and put them on top with the orange segments.
Worth knowing
- Half the orange is juice for soaking and half is segments for eating, so one fruit does two jobs.
- Skyr-soaked oats set thick. If it is stiff in the morning, a spoon of water brings it back.
