- Chia seeds20 g
- Unsweetened almond milk150 ml
- Raspberries80 g
- Maple syrup1 tsp, about 7 g
- Vanilla extractA few drops
Method
Crush half the raspberries against the bottom of a jar with the back of a spoon so they release their juice.
Whisk the chia, almond milk, maple syrup and vanilla together in a separate bowl for thirty seconds, then pour over the crushed fruit without stirring, so the pot sets in two layers.
Fridge for at least four hours. Top with the remaining whole raspberries to serve.

- Unsweetened almond milk is about 13 kcal per 100 ml, so the whole pot lands where it does. Sweetened almond milk roughly triples that.
- Raspberries are the lowest-calorie berry in the table at 30 kcal per 100 g, so the fruit layer is nearly all flavour.
