Ingredients

  • Rolled oats40 g

    Dry weight.

  • Cocoa powder2 tsp (6 g)
  • Egg1 large, about 55 g
  • Banana1 medium, mashed (100 g)

    Peeled weight. A medium banana is about 100 g without the skin.

  • Peanut butter1 tbsp (15 g)

    The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.

  • Unsweetened almond milk50 ml
  • Baking powderHalf a teaspoon
  • Granulated sweetenerTo taste

Method

  1. Heat the oven to 180°C. Mash the banana and beat in the egg and the almond milk.

  2. Stir in the oats, cocoa, baking powder and sweetener.

  3. Spoon half the batter into a small ovenproof dish, put the peanut butter in the middle in one blob, and cover it with the rest of the batter.

  4. Bake for 18 to 20 minutes until the top is set. Wait five minutes before breaking in.

Worth knowing

  • The peanut butter sinks a little and stays molten while the oats set round it. Straight out of the oven it runs; five minutes later it holds.
  • Banana is the only sweetness apart from the sweetener. A very ripe one, brown-spotted, makes the sweetener unnecessary.
