Chocolate Chia and Oat Pudding with Pea Protein
Chia and gluten-free oats set overnight in almond milk with cocoa and pea protein, sliced banana and almond butter on top. No dairy. 35 g of protein.

Ingredients
- Chia seeds20 g
- Gluten-free oats30 g
Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.
- Cocoa powder2 tsp (6 g)
- Pea protein powder1 scoop, about 30 g
- Unsweetened almond milk250 ml
- Banana1 medium, sliced
Peeled weight. A medium banana is about 100 g without the skin.
- Almond butter2 tsp (10 g)
- SaltA pinch
Method
Whisk the cocoa and pea protein into the almond milk in a jar until there are no lumps.
Stir in the chia, oats and salt. Leave for ten minutes, stir again to break up any clumps of chia, then lid on and into the fridge overnight.
In the morning, slice the banana over and drizzle the almond butter from a warmed spoon.
Worth knowing
- Stir it twice in the first ten minutes. Chia left alone sinks into a rubbery layer at the bottom and the top stays thin.
- No dairy and no gluten flag. Pea protein is what gets it to 35 g; without it the pudding is about 410 kcal and 13 g.
