Ingredients
- Strawberries150 g (about 10)
Dried thoroughly. A wet strawberry makes the chocolate seize and slide off.
- Dark chocolate, 85%4 squares, about 20 g
- SaltA few flakes
Method
Rinse the strawberries, then dry each one properly with kitchen paper. Leave the green tops on as handles.
Break the chocolate into a small bowl and microwave in twenty-second bursts, stirring between each, until just melted. It only takes two or three.
Hold each strawberry by the top, dip it two thirds of the way, let the excess drip and set it on baking paper. Scatter a few flakes of salt over before the chocolate sets and chill for fifteen minutes.
Worth knowing
- Four squares is enough to coat ten strawberries thinly. It is a small amount of chocolate spread over a lot of fruit, so the figure is what it is.
- Eighty-five per cent chocolate is bitter against strawberries in a way most people like. Seventy per cent is sweeter and adds a little sugar.
