Ingredients
- Banana1 medium, about 100 g
Firm rather than spotty. A soft banana turns to mush when it thaws in the mouth. Peeled weight. A medium banana is about 100 g without the skin.
- Dark chocolate, 85%4 squares, about 20 g
- Desiccated coconut5 g
Method
Slice the banana into rounds about a centimetre thick, lay them on a lined tray and freeze for an hour until hard.
Melt the chocolate in short bursts in the microwave, stirring between each.
Dip each frozen slice halfway into the chocolate, which sets almost instantly on the cold banana, and scatter the coconut over the wet half.
Return to the freezer for another hour. They keep in a tub in the freezer for a month.
Worth knowing
- Frozen banana eats like ice cream, which is most of the point. The chocolate is under half the calories and the coconut is a garnish.
- Dipping them frozen is what makes this work. Dipped fresh, the banana browns and the chocolate stays soft.
