Ingredients
- Medjool dates2 dates, about 40 g
Stoned weight.
- Soft goat's cheese25 g
- Fresh thymeA few leaves
- Black pepperA grind
Method
Heat the grill to high. Slit the dates, take out the stones and open them up like a book.
Divide the goat's cheese between them, pressing it into the cavity, and scatter the thyme leaves and pepper over.
Set them cheese-side up on a small tray under the grill for three to four minutes until the cheese browns in patches and the dates start to caramelise at the edges. Leave a minute before eating; the sugar is very hot.
Worth knowing
- Goat's cheese is the fat and the protein and the salt. The dates are the sugar. Neither is much on its own and together they are a snack that tastes of far more than two ingredients.
- Feta works in the same weight and is saltier. Ricotta is milder and lower, and does not brown the same way.
