Ingredients
- Cornmeal polenta30 g, dry
- Unsweetened coconut milk100 ml
The carton drink, not tinned. Tinned would add several hundred calories to a bowl that currently carries 5 g of fat.
- Whey isolate1 scoop, about 30 g
Reckoned at 110 kcal and 25 g of protein. An ISO100 scoop is nearer 32 g and 120 kcal, which moves the total by about 10 kcal.
- Blueberries50 g
Method
Bring the coconut milk with a splash of water to a simmer.
Rain in the polenta while whisking and cook for 4 to 5 minutes until thick.
Take it off the heat and let it cool for a minute, then stir the protein through so it does not seize.
Top with the blueberries.
Worth knowing
- The minute off the heat is the whole recipe. Isolate stirred into anything still simmering goes grainy and stays grainy.
- Polenta thickens further as it sits, so make it looser than you want it.
