Fresh in July and August. Frozen stoned cherries the rest of the year, thawed for ten minutes. Stoned weight.
- Cocoa powder2 tsp (6 g)
- Dark chocolate, 85%2 squares (10 g)
- Granulated sweetenerTo taste
Method
Beat the quark and cocoa together with a fork for a full minute. It starts grey and stiff and turns glossy once the cocoa dissolves.
Taste it. Cocoa is bitter and quark is sour, so it will want sweetener, and how much is up to you.
Halve and stone the cherries, spoon them over and grate the chocolate on top with the fine side of a box grater.
Worth knowing
- Quark carries 12 g of protein per 100 g with almost no fat, so the 200 g here is 130 kcal. The two squares of chocolate are 59 kcal on their own and are doing the job the fat would normally do.
- Grated rather than chopped, 10 g of chocolate covers the whole bowl.
