Method

  1. Heat the oven to 200°C. Halve and stone the plums and set them cut side up in a small tin with the cinnamon, the vanilla and a tablespoon of water.

  2. Roast for eighteen to twenty minutes until the skins wrinkle and the juice runs out into the tin.

  3. Toast the seeds in a dry pan for two minutes while the plums cook.

  4. Spoon the skyr into a bowl, add the warm plums and their juice, and scatter the seeds over.

Worth knowing

  • Roasting concentrates the fruit's own sugar, so there is no honey in this one. A hard, sour plum from the supermarket comes out of the oven tasting of September.
  • Roast a whole punnet at once. They keep in the fridge for four days and are as good cold.
